Taking green to a new level
Broccoli is now in season and it’s rated as one of the most nutritious light vegetables in FNA’s My Healthy Eating Guide! Providing more than 100% of your daily vitamin C needs in a half cup serve along with 10% of your folate and fibre needs, broccoli is also one of the highest antioxidant content vegetables.
And aside from its superfood nutritional status, new research shows that growing broccoli may also be good for the environment! |
Brassica vegetables, which include broccoli, cauliflower and Brussels sprouts, have been shown to increase plant available soil nitrogen, therefore helping naturally maintain soil fertility. Try planting broccoli at home and featuring it as a key vegetable in your weekly eating plan by using the following ideas:
- Steam broccoli then toss with lemon juice, olive oil and cracked black pepper. Another great combination is to toss with garlic, olive oil and dried chilli flakes.
- Use as the basis of a salad. Cook, then cool a mix of broccoli florets and green beans. Toss with finely chopped tomato, olive oil, slivered almonds and chopped chives.
- Add cooked broccoli, cherry tomatoes, fresh basil and a can of tuna to wholemeal pasta for a quick and healthy week night dinner.
- Stir fry broccoli florets with lean beef, almonds and red capsicum. Add oyster and soy sauce for a quick and tasty dinner meal.
- Steam broccoli and cauliflower florets and place in an oven proof dish. Cover with a low fat white sauce and grated reduced fat cheese for a delicious accompaniment to roast meat.
